## Why cold brew for decaf?

Cold extraction changes what ends up in your cup. When coffee steeps in cold water over 12-24 hours, it produces fewer total titratable acids than hot brewing - even though the final pH of cold brew and hot brew are similar (both fall in the 4.85-5.13 range). The difference is in acid concentration: hot brewing extracts a higher total load of titratable acids, while cold water pulls a gentler, less irritating profile (Rao & Fuller, 2018, *Scientific Reports*). Combined with the 99.9% caffeine removal from Swiss Water® Process, Colipse Decaf Cold Brew Grounds deliver the lowest-stimulant, most stomach-friendly cup in the Colipse lineup - no caffeine spike, no acid surge, and no compromise on flavor.

The cold brew format also gives you more flexibility than any other preparation method. Brew a concentrate and dilute it with still water, sparkling water, or oat milk. Pour over ice for a quick afternoon glass. Use it as a base for espresso martinis or coffee cocktails where you want coffee depth without caffeine. Control the strength by adjusting your water-to-coffee ratio at the end rather than at the grind. Because the grounds are pre-ground coarse and roasted to order, the only variable left is how you choose to serve it.

## Sourcing and certifications

The beans in Colipse Decaf Cold Brew Grounds come from the JUMARP cooperative in the Yamón District of Peru's Amazonas Region, grown at 1,600-1,800 meters. At this altitude, slower cherry development concentrates the sugars and acids that translate to the natural sweetness and chocolate notes in the final cup. The cooperative holds Fair Trade Organic certification, which covers both the farming practices and the economic terms paid to growers. For more on how Colipse selects and works with its source cooperatives, see [our sourcing page](/brand/sourcing).

Decaffeination uses the Swiss Water® Process, a water-based method that uses no chemical solvents. Green coffee beans are soaked in flavor-charged water that selectively removes caffeine while leaving the flavor compounds in place. The process achieves 99.9% caffeine removal and carries its own third-party certification, independent of the organic and fair trade credentials on the agricultural side. A full breakdown of what these certifications require and how they are verified is available on the [certifications page](/brand/certifications).
