## What makes these beans different?

Most decaf espresso sold in the United States comes from commodity blends - mixed-origin lots where the original farm, altitude, and harvest date are unknown. Colipse Decaf Espresso Beans come from a single cooperative: JUMARP in the Yamón District of Amazonas, Peru. That traceability matters because high-altitude washed coffees from this region produce a cleaner cup with more defined flavor than lower-grown, less carefully processed alternatives.

The decaffeination method is the other point of separation. Many commercial decaf products use chemical solvents - methylene chloride or ethyl acetate - to strip caffeine from the green bean. Swiss Water® Process uses only water, temperature, and time. No synthetic solvents contact the coffee at any stage. The process removes 99.9% of caffeine while preserving the chlorogenic acids, polyphenols, and flavor compounds that give specialty coffee its character.

## Sourcing and certifications

The beans in this product come from JUMARP - Junta de Usuarios del Marañón y sus Afluentes en la Región Perú - a farmer cooperative operating in the Yamón District of the Amazonas Region in Northern Peru. Farms in this cooperative sit between 1,600 and 1,800 meters altitude. Coffee grown at this elevation develops more slowly, producing denser beans with higher sugar and acid complexity than lower-altitude crops. All coffee from this lot is fully washed, a processing method that removes the fruit before drying and produces a cleaner, brighter cup. The cooperative holds Fair Trade and Organic certifications, which means farmers receive a minimum price floor and no synthetic pesticides or fertilizers are used in production. Swiss Water® Process decaffeination takes place at the Swiss Water Decaffeinated Coffee Company facility in Burnaby, British Columbia.
