The ristretto asks the same beans a different question: stop earlier, take less, and see what you find. A ristretto is a restricted espresso shot. Same dose - 7 to 9 grams of ground coffee - same pressure, same machine. The difference is yield. Where an espresso runs to 30ml over 25 to 30 seconds, a ristretto stops at around 15ml in 15 to 20 seconds. The ratio shifts from roughly 1:2 (espresso) to 1:1 (ristretto). Half the water, same amount of coffee.

How does a ristretto taste different from espresso?

Sweeter and more concentrated, with less bitterness. This is not a coincidence - it follows directly from extraction chemistry. Soluble compounds in coffee do not dissolve at the same rate. The first compounds to enter the cup as water passes through the puck are the sweetest: sugars, fruity acids, certain aromatic compounds. Bitterness comes from compounds that require more time and more water contact to dissolve - chlorogenic acid lactones, certain phenolics. By cutting the extraction short, a ristretto takes the early, sweeter fraction and stops before the later, more bitter fraction arrives. The result is a shot that is more viscous, more intensely flavoured, and sweeter-tasting than an espresso pulled from the same beans.

When does ristretto make more sense than espresso?

Primarily in milk drinks. When you combine a shot with steamed milk - in a flat white, a cortado, or a latte - the milk’s sweetness and fat interact with the coffee’s bitterness. A bitter espresso base can read as harsh or astringent once milk is added. A sweeter ristretto base integrates more smoothly. This is why many specialty cafes use ristretto as the default shot in flat whites. The coffee flavour stays present through the milk without fighting it. The shorter pull also means less dilution of the coffee’s aromatic intensity.

Does ristretto work for decaf?

Identically. The extraction physics are caffeine-independent. The same early-sweet, late-bitter compound sequence applies to decaffeinated coffee; caffeine is a bitter alkaloid, but it is not the only bitter compound in the cup, and removing it does not change the order in which flavour compounds dissolve. The ristretto extraction captures the early, sweeter fraction of those compounds just as effectively as it does in caffeinated coffee. Why use ristretto in milk drinks specifically?

The sweetness of a ristretto complements rather than competes with milk. In a flat white, where the ratio of milk to coffee is closer than in a latte, the base shot contributes significantly to the overall flavour profile. A sweeter, more concentrated ristretto gives the drink intensity without bitterness. In a cortado - equal parts espresso and steamed milk - the effect is even more pronounced. For decaf milk drinks in the evening, this matters more than it might seem. You want the coffee flavour to be present and satisfying, not washed out by the milk or overshadowed by bitterness. A ristretto base solves both problems.
